Tomato and Basil bruschetta
Extra virgin olive oil
Salt and pepper to taste
Slice the tomatoes into cubes. Season with salt and pepper and marinate in olive oil and basil. Rub with a cut of clove of garlic and drizzle with olive oil each slice of bread. Place the bread slices onto a prepared baking sheet and leave the bread to toast. Cover the bread slices with the marinate tomatoes and mozzarella slices and take them again into the oven to melt the cheese. Remove from oven, sprinkle with Basil and serve hot.
